Our client is currently recruiting a innovative and inventive Pastry Chef to join their team in Co. Wicklow. Reporting to the Head Chef, this person should be an energetic and ambitious Pastry Chef with experience in fine dining. A flare for pastry is a necessity and being able to come up with new and exciting dishes and pastry offers. Key responsibilities of the role include: Execution of food production activities, HACCP, Correct food storage (e.g. maintaining tidiness, chilling, deliveries - following the first in – first out principle), Portion control of stock usage for the daily service and functions, Adhere to the controls of Hazard Analysis Critical Control Point (HACCP) - chefs and kitchen porters, fire safety, grease trap, pest control manuals, Executes counter measures in the production in case of customer complaints, Practise of temperatures for defrosting, cooking and chilling, fridges, and cleaning and documenting this information on daily basis, Ensure that the section of responsibility is properly organised, for daily service, and for the chef on the next shift, Perks include free parking, meals when on duty and reduced rates for friends and family in sister hotels.
